Preparation steps:

1. Preheat the oven to 220°C (430°F).
2. Prick the eggplants with a fork, rub with a little oil, and place on a baking sheet.
3. Roast in the oven for 30-40 minutes until the skin is charred and the inside is soft.
4. Cool, peel off the skin, and mash the eggplant in a bowl.
5. Heat oil in a pan over medium heat.
6. Add cumin seeds and let them sizzle.
7. Add chopped onions and saute until golden brown.
8. Stir in garlic, ginger, and green chilies, cooking until fragrant.
9. Add tomatoes, turmeric, coriander, and red chili powder. Cook until tomatoes break down.
10. Mix in the mashed eggplant, cooking for 5-7 minutes.
11. Add salt and adjust seasoning.
12. Garnish with fresh cilantro and serve hot.
