Preparation steps:

1. In a saucepan, combine 500 ml heavy cream and 250 ml whole milk. Heat gently until warm.
2. In a separate bowl, whisk 150 grams sugar with 5 egg yolks until pale.
3. Gradually add warm cream mixture to yolks, whisking constantly.
4. Return mixture to saucepan. Stir over low heat until thickened, coating the back of a spoon.
5. Remove from heat. Stir in 1 teaspoon vanilla extract.
6. Cool to room temperature, then chill in the refrigerator for at least 4 hours.
7. Pour chilled mixture into an ice cream maker. Churn according to manufacturers instructions.
8. Transfer to a container and freeze until firm.
