Preparation steps:

1. Slice eggplants into 1/4-inch thick rounds.
2. Sprinkle eggplant slices with salt.
3. Let sit for 30 minutes to release moisture.
4. Rinse and pat dry eggplant slices.
5. Heat olive oil in a large pan.
6. Fry eggplant slices until golden brown.
7. Remove and drain on paper towels.
8. Cook pasta in salted boiling water until al dente.
9. Heat olive oil in another pan.
10. Saute minced garlic until fragrant.
11. Add crushed tomatoes and simmer.
12. Season with salt, pepper, and basil.
13. Add eggplant to tomato sauce.
14. Drain pasta and add to sauce.
15. Toss pasta to coat evenly.
16. Serve with grated ricotta salata on top.
