Preparation steps:

1. Hull and chop 300g of fresh strawberries.
2. In a blender, puree strawberries with 100g sugar until smooth.
3. In a saucepan, heat 500ml heavy cream and 250ml whole milk until just simmering.
4. Whisk 5 egg yolks with 100g sugar until pale.
5. Gradually whisk in hot cream mixture into yolks.
6. Return to saucepan; cook on low, stirring until thickened.
7. Remove from heat; mix in strawberry puree and a pinch of salt.
8. Chill mixture thoroughly in refrigerator.
9. Churn in ice cream maker according to manufacturers instructions.
10. Freeze for at least 4 hours before serving.
