Preparation steps:

1. Press tofu to remove excess water.
2. Cut tofu into cubes.
3. Heat oil in a pan; fry tofu until golden.
4. Set tofu aside.
5. In the same pan, saute onions until translucent.
6. Add garlic, ginger; cook until fragrant.
7. Stir in cumin, coriander, turmeric, cayenne.
8. Add chopped spinach; cook until wilted.
9. Blend spinach mixture to a smooth paste.
10. Return paste to pan; add tofu.
