Preparation steps:

1. Peel and grate 500g of fresh carrots.
2. In a heavy pan, heat 3 tablespoons of ghee over medium heat.
3. Add the grated carrots and saute for about 5-7 minutes until they soften.
4. Pour in 2 cups of whole milk and bring to a boil.
5. Reduce heat and let it simmer, stirring occasionally, until the milk is absorbed.
6. Stir in 150g of sugar and cook until it dissolves.
7. Add 1 teaspoon of cardamom powder.
8. Cook, stirring, until the mixture thickens and ghee releases from the sides.
9. Garnish with 50g of chopped almonds and pistachios.
10. Serve warm or cold.
