Preparation steps:

1. Combine 1 cup semolina, 1 tablespoon all-purpose flour, and a pinch of salt. Add water gradually to form a dough. Roll thin, cut small circles, and deep fry until golden and puffed.
2. Boil 2 medium potatoes, mash them, and mix with 1/2 cup boiled chickpeas, 1 teaspoon cumin powder, and salt to taste.
3. Blend 1 cup fresh mint leaves, 1/2 cup coriander leaves, 1 green chili, a small piece of ginger, and 1 tablespoon tamarind pulp. Mix this paste with 4 cups of cold water, adding 1 teaspoon roasted cumin powder, 1 teaspoon chaat masala, and salt to taste. Chill before serving.
4. Gently crack the top of each puri, fill with potato mixture, a spoonful of sweet tamarind chutney, and dip into prepared pani.
