Preparation steps:

1. Rinse 1 cup rice; cook with 2 cups water until tender. Set aside.
2. Boil 1 cup toor dal with 3 cups water until soft. Mash lightly.
3. In a pan, heat 2 tbsp oil; add 1 tsp mustard seeds, 1 tsp cumin seeds.
4. Add 1/2 cup chopped onions, saute until golden.
5. Stir in 1 cup mixed diced veggies (carrots, bell peppers, beans), cook until soft.
6. Add 2 tbsp sambhar powder, 1/2 tsp turmeric, and 1/2 tsp red chili powder.
7. Pour in 2 cups tamarind water, let simmer until fragrant.
8. Combine cooked dal; simmer for 10 minutes.
9. Mix in cooked rice; blend thoroughly, garnish with fresh coriander.
10. Serve hot, relishing the harmonious flavors.
