Preparation steps:

1. Preheat oven to 160°C (320°F).
2. Crush 150g digestive biscuits; mix with 75g melted butter.
3. Press mixture into a 23cm springform pan; chill.
4. Beat 600g cream cheese with 150g sugar until smooth.
5. Add 3 eggs, one at a time, mixing well.
6. Stir in 1 tsp vanilla extract and 200ml sour cream.
7. Pour filling over crust; smooth top.
8. Bake for 50-60 minutes until set.
9. Cool to room temperature, then refrigerate for 4 hours.
10. Serve chilled, with fruit or chocolate topping.
