Preparation steps:

1. In a saucepan, combine 2 cups of heavy cream, 1 cup of whole milk, and ¾ cup of sugar. Stir over medium heat until the sugar dissolves.
2. Add ½ cup of unsweetened cocoa powder, whisking until smooth and fully incorporated.
3. In a separate bowl, whisk 4 large egg yolks. Gradually pour a cup of the warm chocolate mixture into the yolks, whisking constantly to temper the eggs.
4. Return the egg mixture to the saucepan, cooking gently over low heat. Stir constantly until the mixture thickens enough to coat the back of a spoon.
5. Remove from heat and stir in 100 grams of finely chopped dark chocolate and 1 teaspoon of vanilla extract until smooth.
6. Cool the mixture, then refrigerate for at least 4 hours.
7. Churn in an ice cream maker according to the manufacturers instructions.
8. Freeze the churned ice cream for at least 2 hours before serving.
