Preparation steps:

1. Prepare 1 liter of chicken or beef stock; keep it warm.
2. Finely chop 1 small onion.
3. Heat 2 tablespoons of olive oil in a large pan.
4. Add the chopped onion and saute until translucent.
5. Stir in 300g of Arborio rice; toast for 2-3 minutes.
6. Pour in 125ml of white wine; stir until absorbed.
7. Add a ladleful of warm stock; stir until absorbed.
8. Continue adding stock, a ladle at a time, stirring frequently.
9. Dissolve a pinch of saffron in a little warm stock.
10. Add the saffron mixture to the rice.
11. Continue cooking and adding stock until rice is al dente.
12. Remove from heat; stir in 50g of butter and 50g of grated Parmesan.
13. Season with salt to taste.
14. Let it rest for a couple of minutes before serving.
