Preparation steps:

1. Wash and chop 300g mixed vegetables (carrots, beans, potatoes, drumsticks) into uniform pieces.
2. Boil vegetables in salted water until tender but firm, about 10 minutes; drain and set aside.
3. Grind 1 cup grated coconut, 2 green chilies, 1 teaspoon cumin seeds, and a little water to a smooth paste.
4. In a large pan, combine cooked vegetables, coconut paste, 1/2 teaspoon turmeric, and a dash of salt.
5. Cook on low heat, stirring gently for 5 minutes until well combined.
6. Add 1/2 cup plain yogurt, mix gently, and simmer for 2 more minutes.
7. Finish with fresh curry leaves and 1 tablespoon coconut oil; stir and remove from heat.
8. Serve hot with steamed rice.
