Preparation steps:

1. Soak 200g tamarind pulp in 1 cup warm water for 30 minutes.
2. Strain the mixture, extracting the thick tamarind juice. Discard solids.
3. Heat 2 tablespoons oil in a pan over medium heat.
4. Add 1 teaspoon mustard seeds and let them splutter.
5. Stir in 1 tablespoon finely chopped ginger and 2 cloves minced garlic. Saute until fragrant.
6. Mix in 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, and 1/2 teaspoon cumin powder.
7. Pour in the tamarind juice, stirring well.
8. Add 100g jaggery or brown sugar, cooking until dissolved and thickened.
9. Season with salt to taste, cooking for another 5 minutes.
10. Cool before storing in an airtight jar.
