Preparation steps:

1. Wash and peel 500g of raw mangoes, then slice into thin strips.
2. Spread the mango strips on a clean cloth, drying them under the sun for 2-3 days until moisture-free.
3. In a pan, dry roast 2 tablespoons of mustard seeds and 1 tablespoon of fenugreek seeds until aromatic. Cool and grind into a fine powder.
4. Heat 100ml of sesame oil until it reaches smoking point, then cool slightly.
5. Mix the dried mango slices with the spice powder, 2 tablespoons of red chili powder, 1 tablespoon of turmeric powder, and salt to taste.
6. Pour the warm oil over the mixture, stirring well to coat evenly.
7. Transfer to an airtight jar, allowing the flavors to meld for at least a week before serving.
