Preparation steps:

1. Dry roast ¼ cup chana dal and ¼ cup urad dal in a pan over medium heat until golden brown. Set aside.
2. In the same pan, dry roast 10 dried red chilies until fragrant. Remove and cool.
3. Toast 1 tablespoon coriander seeds, 1 teaspoon cumin seeds, and 1 teaspoon sesame seeds until aromatic. Set aside.
4. Allow all roasted ingredients to cool completely.
5. In a blender, combine the cooled lentils, chilies, seeds, ¼ teaspoon asafoetida, and 1 teaspoon salt.
6. Blend to a coarse powder, ensuring not to over-process.
7. Store in an airtight container to retain freshness.
