Preparation steps:

1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. In a bowl, cream together 150g of softened unsalted butter and 200g of brown sugar until smooth.
3. Beat in 1 large egg and 1 teaspoon of vanilla extract until well combined.
4. In a separate bowl, whisk together 125g of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and a pinch of salt.
5. Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
6. Fold in 150g of rolled oats and optional add-ins like 100g of raisins or chocolate chips.
7. Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 5 cm apart.
8. Bake for 12-15 minutes or until the edges are golden brown.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
