Preparation steps:

1. Marinate 500g lamb chunks with 4 tbsp yogurt, 1 tbsp ginger-garlic paste, 1 tsp turmeric, and salt for 1 hour.
2. Heat 3 tbsp mustard oil in a pan. Add 2 bay leaves, 3 cloves, 3 cardamoms, and 1 cinnamon stick.
3. Add 2 finely sliced onions; saute until golden brown.
4. Stir in 1 tsp ginger paste and 1 tsp garlic paste; cook until aromatic.
5. Mix in 2 chopped tomatoes, 1 tbsp cumin powder, 1 tbsp coriander powder, and 1 tsp red chili powder.
6. Add marinated lamb; cook until browned.
7. Pour in 1 cup water; simmer on low heat, covered, for 1.5 hours until meat is tender.
8. Stir occasionally, adding water if necessary to prevent sticking.
9. Sprinkle 1 tsp garam masala and 2 tbsp chopped coriander; cook for another 5 minutes.
10. Serve hot with rice or flatbreads.
