Preparation steps:

1. Rinse 200g of sushi rice under cold water until the water runs clear.
2. Cook the rice in a rice cooker with 250ml of water.
3. Once cooked, transfer to a bowl and gently fold in 2 tablespoons of rice vinegar, 1 tablespoon sugar, and 1 teaspoon salt. Let cool.
4. Slice 200g of fresh salmon into thin, even slices.
5. Wet your hands with water and shape the cooled rice into small, oval mounds.
6. Place a slice of salmon over each rice mound, gently pressing to adhere.
7. Serve with soy sauce, wasabi, and pickled ginger.
