Preparation steps:

1. Mix 250g all-purpose flour, 2 tbsp ghee, and 1/2 tsp salt. Gradually add water, kneading until smooth. Rest for 30 minutes.
2. Divide dough into small balls. Roll each into a thin circle.
3. Heat oil in a pan. Fry each circle until puffed and golden.
4. Boil 500g potatoes, peel, and cube.
5. In another pan, heat 2 tbsp oil. Add 1 tsp cumin seeds, 1 bay leaf, 2 green chilies, chopped.
6. Add 1 chopped onion and 1 tsp ginger paste. Cook until golden.
7. Stir in 2 chopped tomatoes, 1 tsp turmeric, 1 tsp cumin powder, 1 tsp coriander powder, and salt to taste.
8. Add potatoes and 1 cup water. Cook until thickened and flavorful.
9. Garnish with fresh coriander and serve with luchis.
