Preparation steps:

1. Wash and trim cime di rapa.
2. Peel and slice garlic cloves.
3. Bring a large pot of salted water to a boil.
4. Add cime di rapa to boiling water.
5. Cook for 5 minutes, then remove with a slotted spoon.
6. In the same pot, add orecchiette pasta.
7. Cook pasta until al dente per package instructions.
8. Meanwhile, heat olive oil in a pan over medium heat.
9. Add sliced garlic and red pepper flakes.
10. Saute until garlic is golden.
11. Add anchovy fillets to the pan.
12. Stir until anchovies dissolve.
13. Return cime di rapa to the pan.
14. Toss to coat with oil and garlic.
15. Drain pasta, reserving some pasta water.
16. Add pasta to the pan with cime di rapa.
17. Mix well, adding reserved pasta water if needed.
18. Adjust seasoning with salt and pepper.
19. Serve hot with grated Pecorino Romano.
