Preparation steps:

1. Soak 1 cup rice and 1 cup urad dal separately for 4 hours.
2. Grind them into a smooth batter, mix, and ferment overnight.
3. Pour batter into greased idly molds.
4. Steam in a pot for 10-12 minutes until cooked.
5. For sambhar, pressure cook 1 cup toor dal until soft.
6. In a pan, heat 2 tbsp oil, add mustard seeds, and allow to splutter.
7. Add 1 chopped onion, saute until golden.
8. Stir in 1 chopped tomato, cook until soft.
9. Add 1 tbsp sambhar powder, 1/2 tsp turmeric, and cooked dal.
10. Mix in 2 cups water, bring to boil.
11. Add 1 cup mixed vegetables, simmer until tender.
12. Season with salt, garnish with coriander.
13. Serve hot idlies with ladleful of sambhar.
