Description

Chakka Varatti is an indulgent, tropical jackfruit preserve with a rich, caramel-like texture. This traditional South Indian delicacy enchants with its deep, fruity sweetness and subtle hints of ghee. Often enjoyed as a spread or dessert, it reflects the vibrant culinary heritage of Kerala, capturing the essence of sun-ripened jackfruit.

Preparation steps:

1. Peel and deseed 1 kg of ripe jackfruit, then finely chop the flesh.
2. In a large pan, cook the jackfruit with 200 ml of water on medium heat until soft.
3. Blend the jackfruit to a smooth puree.
4. In the same pan, heat 200 ml of ghee.
5. Add the jackfruit puree and 500 g of jaggery.
6. Stir continuously over medium heat until the mixture thickens and leaves the sides of the pan.
7. Cook until it reaches a deep brown color and jam-like consistency.
8. Cool and store in an airtight container.
