Preparation steps:

1. Peel and finely chop 250g of carrots.
2. Heat 2 tablespoons of oil in a pan.
3. Add 1 teaspoon mustard seeds; let them splutter.
4. Stir in 1 teaspoon urad dal and cook until golden.
5. Add 1 dried red chili and a pinch of asafoetida.
6. Toss in the carrots; saute for 5 minutes.
7. Sprinkle with salt to taste and 2 tablespoons of water.
8. Cover and cook on low heat until carrots are tender.
9. Stir in 3 tablespoons of grated coconut.
10. Finish with fresh curry leaves and serve warm.
