Preparation steps:

1. Blanch 500g spinach in boiling water for 2 minutes. Drain and plunge into ice water. Puree until smooth.
2. Heat 2 tablespoons of oil in a pan; fry 250g cubed paneer until golden. Set aside.
3. In the same pan, add 1 tablespoon oil; saute 1 chopped onion until translucent.
4. Add 2 minced garlic cloves, 1 teaspoon grated ginger, and 1 chopped green chili. Cook until fragrant.
5. Mix in 1 teaspoon cumin, 1 teaspoon coriander, 1/2 teaspoon turmeric, and 1 teaspoon garam masala.
6. Stir in pureed spinach, cook for 5 minutes.
7. Add 100ml cream, salt to taste, and gently fold in fried paneer. Simmer for 5 minutes.
8. Serve hot with naan or rice.
