Preparation steps:

1. Wash and dry 500g raw green mangoes. Dice into 1-inch pieces, retaining the peel.
2. Combine 50g mustard powder, 50g red chili powder, 25g fenugreek seeds, and 30g salt in a bowl.
3. Mix mango pieces with the spice blend thoroughly.
4. Heat 100ml sesame oil until warm, then cool slightly. Pour over the mango mixture, stirring well.
5. Transfer to a sterilized jar, seal tightly, and allow to marinate for at least 5 days.
6. Mix 1 cup cooked rice with 1 tablespoon ghee and a spoonful of avakaaya.
