Preparation steps:

1. Rinse 500g of ripe tomatoes under cold water.
2. Score a small "X" on the bottom of each tomato.
3. Boil water in a large pot and prepare an ice bath.
4. Blanch tomatoes in boiling water for 30 seconds, then transfer to the ice bath.
5. Peel off skins and chop tomatoes into quarters.
6. Heat 2 tablespoons olive oil in a pan over medium heat.
7. Add chopped tomatoes and cook for 10-15 minutes, stirring occasionally until soft.
