Preparation steps:

1. Mix 1 cup of rice and 1 cup of chickpea flour (besan) in a bowl.
2. Add 1 tablespoon yogurt and 1 cup water, stirring to form a smooth batter.
3. Cover and let it ferment overnight or for 8-10 hours at room temperature.
4. Add 1 teaspoon salt, 1 tablespoon sugar, 1 teaspoon lemon juice, and 1 teaspoon ginger paste. Mix well.
5. Dissolve 1 teaspoon of fruit salt (e.g., Eno) in 1 tablespoon water, then gently fold into the batter.
6. Pour the batter into a greased baking dish or cake pan.
7. Steam in a preheated steamer for 15-20 minutes or until a toothpick inserted comes out clean.
8. In a small pan, heat 1 tablespoon oil, add 1 teaspoon mustard seeds, and a few curry leaves. Let them splutter.
9. Pour the tempering over the steamed Dhokla.
10. Cut into squares, garnish with chopped coriander, and serve with chutney.
