Preparation steps:

1. Rinse 1.5 cups of basmati rice until water runs clear. Soak for 30 minutes, then drain.
2. In a large pot, heat 2 tablespoons of oil over medium heat. Add 1 sliced onion and until golden brown.
3. Add 1 teaspoon cumin seeds, 1 bay leaf, 4 cardamom pods, and 4 cloves. Stir for 1 minute until fragrant.
4. Add 1 tablespoon ginger-garlic paste, for another minute.
5. Stir in 1 cup diced tomatoes, 1 teaspoon turmeric, 1 teaspoon coriander powder, and 1 teaspoon garam masala. Cook until oil separates.
6. Add 300 grams of cubed tofu, marinate with salt and pepper, and mix well into the spice blend.
7. Layer the soaked rice over the tofu mixture. Pour 3 cups of water and add salt to taste.
8. Drizzle a few strands of saffron soaked in 2 tablespoons of warm milk over the rice.
9. Cover and cook on low heat for 20 minutes or until rice is fully cooked.
10. Remove from heat, let it rest for 5 minutes, then gently fluff with a fork.
11. Garnish with chopped coriander and serve hot.
