Preparation steps:

1. Heat 2 tablespoons of oil in a pan. Add 1 teaspoon mustard seeds, 10 curry leaves, and until aromatic.
2. Add 2 sliced onions; cook until golden brown.
3. Stir in 2 tablespoons ginger-garlic paste, briefly.
4. Add 1 kg chicken pieces; brown evenly.
5. Mix in 2 teaspoons chili powder, 1 teaspoon turmeric, 2 teaspoons coriander powder, and 1 teaspoon garam masala. Cook for 5 minutes.
6. Pour in 200 ml coconut milk and 300 ml water; simmer until chicken is tender.
7. Garnish with fresh coriander leaves, serve hot.
