Preparation steps:

1. Rinse 200g of jasmine rice and cook it in a rice cooker with 400ml water.
2. Spread the cooked rice thinly on a baking sheet and let it dry overnight or until fully dehydrated.
3. Heat a deep pan with 500ml vegetable oil over medium-high heat.
4. Fry the dried rice until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
5. In a small pan, heat 1 tablespoon vegetable oil. Add 2 tablespoons chopped scallions and saute briefly.
6. Drizzle the scallion oil over the crispy rice.
7. Optionally, sprinkle with 2 tablespoons of soy sauce and 50g shredded pork.
8. Cut into squares and serve immediately.
