Preparation steps:

1. Marinate 500g mutton pieces with 2 tablespoons yogurt, 1 tablespoon ginger-garlic paste, 1 teaspoon turmeric, and salt. Let it rest for 30 minutes.
2. Heat 2 tablespoons oil in a pan. Add 1 teaspoon mustard seeds and let them splutter.
3. Add 2 chopped onions and saute until golden brown.
4. Mix in 2 chopped tomatoes and cook until soft.
5. Add marinated mutton, 1 tablespoon red chili powder, and 1 tablespoon coriander powder. Stir well.
6. Pour in 1 cup water, cover, and cook on low heat for 45 minutes or until mutton is tender.
7. Add 1/2 cup grated coconut and 10 curry leaves. Stir and cook until dry.
8. Garnish with fresh coriander leaves before serving.
