Preparation steps:

1. In a bowl, mix 2 cups of whole wheat flour, 1 tablespoon of oil, and a pinch of salt. Gradually add water, kneading until a firm, smooth dough forms. Cover and rest for 30 minutes.
2. Boil 500g of potatoes until tender. Peel and cube them.
3. Heat 2 tablespoons of oil in a pan. Add 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, and let them splutter. Stir in 1 chopped onion and saute until translucent.
4. Add 1 teaspoon turmeric, 1 teaspoon chili powder, and 1 teaspoon salt. Stir well. Add the cubed potatoes and 1 cup of water. Simmer for 10 minutes.
5. Add chopped coriander leaves and a squeeze of lemon juice for brightness.
6. Divide the dough into small balls. Roll each into a circle, about 4 inches in diameter.
7. Heat oil in a deep pan. Fry each poori until golden and puffed, about 30 seconds per side. Drain on paper towels.
8. Enjoy pooris hot with bhaaji on the side.
