Preparation steps:

1. Dry roast 1 cup semolina in a pan on medium heat until fragrant. Let cool.
2. In a bowl, mix roasted semolina, 1 cup yogurt, 1/4 cup water, and salt to taste. Let it rest for 15 minutes.
3. Heat 2 tablespoons oil in a pan, add 1 teaspoon mustard seeds. Let them splutter.
4. Add 1 tablespoon chana dal, 1 tablespoon urad dal, and saute until golden.
5. Add a pinch of asafoetida, 10 curry leaves, and 1 chopped green chili. Saute for a minute.
6. Mix the tempered spices into the semolina batter.
7. Add 1 teaspoon fruit salt or baking soda, mix gently.
8. Grease idly molds and pour batter into each mold.
9. Steam in an idly steamer or large pot with water for 10-12 minutes.
10. Cool slightly before removing, and serve with coconut chutney or sambar.
