Preparation steps:

1. Rinse 200g flattened rice under cold water until soft. Drain and set aside.
2. Heat 2 tablespoons oil in a pan over medium heat.
3. Add 1 teaspoon mustard seeds and let them splutter.
4. Stir in 10 curry leaves and 1 finely chopped onion. Saute until translucent.
5. Add 1 chopped green chili and ½ teaspoon turmeric powder. Cook briefly.
6. Mix in the softened rice, 50g roasted peanuts, and salt to taste.
7. Gently stir and cook for 3-4 minutes, ensuring even spice distribution.
8. Finish with a squeeze of lemon juice and garnish with chopped coriander.
