Preparation steps:

1. Wash and dry 500g green mangoes.
2. Cut mangoes into bite-sized pieces, discarding the pit.
3. In a bowl, mix 2 tablespoons salt, 1 tablespoon turmeric, and mango pieces. Let sit for 30 minutes.
4. Heat 1/2 cup oil in a pan over medium heat.
5. Add 1 tablespoon mustard seeds, 1 teaspoon fenugreek seeds, letting them splutter.
6. Stir in 2 tablespoons red chili powder, 1 teaspoon asafoetida, and mango pieces.
7. Cook for 10 minutes, stirring occasionally, until mangoes soften.
