Preparation steps:

1. Wash and dry 500g of fresh limes. Cut each lime into small wedges.
2. Place limes in a bowl, add 2 tablespoons of salt. Mix well, then set aside for 24 hours.
3. In a pan, heat 3 tablespoons of oil. Add 1 teaspoon mustard seeds.
4. Once seeds splutter, add 1 tablespoon fennel seeds, 1 tablespoon fenugreek seeds, and 1 tablespoon nigella seeds. Cook briefly until aromatic.
5. Add 2 tablespoons red chili powder and 1 teaspoon turmeric to the pan. Stir quickly to combine.
6. Mix the spiced oil with the salted limes.
7. Transfer to a sterilized jar. Seal tightly and let mature for a week in a cool, dark place, shaking occasionally.
8. Once matured, refrigerate and enjoy with your favorite dishes.
