Preparation steps:

1. Rinse 2 cups of basmati rice in cold water until clear, then soak for 30 minutes.
2. Heat 3 tablespoons of oil in a large pan, add 2 finely sliced onions, and until golden.
3. Add 500g of chicken pieces and cook until browned.
4. Stir in 2 tablespoons of biryani masala, 1 tablespoon of ginger-garlic paste, 1 teaspoon of turmeric, and salt to taste.
5. Add 1 cup of plain yogurt and simmer for 10 minutes.
6. In a separate pot, bring water to boil, add soaked rice, and cook until 70% done. Drain.
7. Layer the chicken mixture and rice in a large pot, sprinkle with a pinch of saffron soaked in 2 tablespoons of warm milk.
8. Cover with a tight lid and cook on low heat for 20 minutes.
9. Garnish with chopped cilantro and serve hot.
