Preparation steps:

1. In a large pot, combine 2 liters of water, 1 onion, and a 5cm piece of ginger, both charred over open flame.
2. Add 1kg beef bones, 1 teaspoon salt, 1 tablespoon sugar, and simmer for 4 hours. Skim foam occasionally.
3. Toast 1 cinnamon stick, 4 star anise, and 5 cloves in a pan. Add to broth.
4. Strain broth, discarding solids. Return clear broth to pot.
5. Cook 200g rice noodles according to package instructions. Drain and set aside.
6. Thinly slice 300g beef sirloin.
7. Divide noodles into bowls, top with raw beef slices, and ladle hot broth over to cook beef.
8. Garnish with bean sprouts, lime wedges, sliced chili, fresh basil, and mint.
9. Serve immediately with hoisin and sriracha sauces.
