Preparation steps:

1. Preheat your oven to 200°C (390°F).
2. Slice the eggplants in half lengthwise and score the flesh in a crosshatch pattern, being careful not to cut through the skin.
3. Brush the cut sides with sesame oil and place them on a baking tray, cut side up.
4. Roast in the oven for 20-25 minutes until the flesh is tender.
5. Meanwhile, mix miso paste, mirin, sugar, and sake in a small bowl to create the glaze.
6. Remove eggplants from the oven and brush generously with the miso glaze.
7. Return to oven and broil for 3-5 minutes until the glaze is caramelized and bubbly.
