Soybean sundal is a South Indian dry stir-fry made by soaking and boiling soybeans until tender, then sautéing them in a tempering of mustard seeds, curry leaves, chilies, and urad dal. Grated coconut is added for flavor. It’s protein-rich, mildly spiced, and often served as a snack or festive side.
