Preparation steps:

1. Press tofu for 20 minutes to remove excess water; cube it.
2. Heat 2 tablespoons of oil in a pan over medium heat.
3. Fry tofu cubes until golden. Remove and set aside.
4. In the same pan, add 1 tablespoon oil; 1 cup chopped onions until translucent.
5. Add 1 tablespoon ginger-garlic paste; cook until fragrant.
6. Stir in 1 cup chopped tomatoes, cooking until softened.
7. Mix in 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon garam masala, and 1/2 teaspoon turmeric.
8. Add 1 cup chopped bell peppers; cook until slightly tender.
9. Return tofu to the pan; stir gently to coat.
10. Season with salt and 1/2 teaspoon red chili powder to taste.
11. Garnish with fresh cilantro before serving.
