Preparation steps:

1. Preheat oven to 200°C (390°F).
2. In a bowl, mix 3 tablespoons of white miso, 2 tablespoons of mirin, 2 tablespoons of sake, and 1 tablespoon of sugar until smooth.
3. Marinate 600 grams of black cod fillets in the mixture for at least 2 hours, preferably overnight.
4. Remove excess marinade and place fillets on a baking sheet lined with parchment paper.
5. Bake for 10-15 minutes, or until fish is cooked through and flakes easily.
6. Optionally, broil for 1-2 minutes for a caramelized finish.
7. Serve with steamed rice and pickled vegetables.
