Preparation steps:

1. Toast 2 cups of puffed rice in a pan over medium heat for 3 minutes. Set aside.
2. In a large bowl, mix 1/2 cup finely chopped onions, 1/2 cup chopped tomatoes, and 1/4 cup boiled potatoes.
3. Add the toasted puffed rice, 1/4 cup sev (crispy chickpea noodles), and 1/4 cup crushed puris (crispy flatbread).
4. Stir in 2 tablespoons tamarind chutney and 1 tablespoon green mint chutney.
5. Season with 1/2 teaspoon chaat masala, 1/4 teaspoon salt, and a pinch of red chili powder.
6. Toss everything gently to combine.
7. Garnish with fresh coriander leaves and a squeeze of lemon juice. Serve immediately.
