Preparation steps:

1. Mix semolina, all-purpose flour, and salt in a bowl; add water gradually to form a firm dough. Rest for 30 minutes.
2. Divide the dough into small balls; roll into thin discs.
3. Heat oil in a pan; fry discs until golden and puffed. Set aside to cool.
4. Prepare fillings: Boil, peel, and cube potatoes. Cook chickpeas until tender.
5. Mix potatoes, chickpeas, cumin, chaat masala, salt, and chili powder.
6. Gently crack open kachoris; fill with potato mixture.
