Preparation steps:

1. Slice bitter gourd, eggplant, and potatoes; soak bitter gourd in salt water for 15 minutes.
2. Heat oil in a pan; fry dried lentil dumplings (bori) until golden, set aside.
3. Saute panch phoron (Bengali five-spice) in oil; add sliced vegetables.
4. Add turmeric, salt, and sugar; stir well.
5. Pour in a mustard seed paste and ginger paste; mix thoroughly.
6. Add water and simmer until vegetables soften.
