Preparation steps:

1. Bring a large pot of salted water to a boil.
2. Cut guanciale into small strips.
3. Heat a skillet over medium heat.
4. Add guanciale to the skillet.
5. Cook until crispy and fat is rendered.
6. Remove guanciale and set aside.
7. Add pasta to boiling water.
8. Cook pasta until al dente.
9. Reserve some pasta water.
10. Drain pasta and add to skillet.
11. Add reserved pasta water to skillet.
12. Toss pasta with guanciale and rendered fat.
13. Grate Pecorino Romano cheese.
14. Add cheese to pasta and mix well.
15. Season with black pepper.
16. Serve immediately.
