Preparation steps:

1. In a large pot, heat 2 tablespoons of oil over medium heat.
2. Add 100g sliced mushrooms and saute until soft.
3. Stir in 1 tablespoon minced garlic and 1 tablespoon minced ginger; cook until fragrant.
4. Pour in 4 cups vegetable broth and bring to a simmer.
5. Add 200g sliced tofu, 50g bamboo shoots, and 2 tablespoons soy sauce.
6. Mix 3 tablespoons cornstarch with 3 tablespoons water; add to the soup to thicken.
7. Stir in 1 tablespoon white vinegar and 1 teaspoon ground white pepper.
8. Simmer for 5 minutes, adjust seasoning to taste.
9. Serve hot, garnished with sliced green onions.
