Preparation steps:

1. Cook 1 cup of rice in 2 cups of water until soft. Let it cool.
2. Mix the cooled rice with 1 cup of plain yogurt until creamy.
3. Heat 1 tablespoon of oil in a pan.
4. Add 1 teaspoon of mustard seeds; let them splutter.
5. Add 1 teaspoon of grated ginger, 1 chopped green chili, and a few curry leaves. Saute briefly.
6. Pour the tempering over the yogurt rice mixture.
7. Add salt to taste and mix well.
8. Garnish with chopped coriander leaves.
9. Serve chilled or at room temperature.
